Add parameter extraction to vignette #74

What do each of the parameters in the output mean and how can you get them out? This should be a section in the vignette. We might also want to write some additional code to output all these parameters in a more meaningful way. For example we could create a named list of output estimates, ie $occupancy_estimates $julian_day_coefficients ...
