Documentation: Find a way to make it easy to update it #9

Right now the documentation is a pdf, so it's not possible to modify it. Should be Markdown or LaTeX.

We can use pandoc to convert the docx file to Markdown, but the format is pretty bad. Should think about another way to make this work
