various fixes

fix for #171 on README.md fix for #179 on config.example

• added requirements to README.md as well as sample instructions
• restored SERVER_SETTINGS to config.example
• changed script to use the SERVER_SETTINGS var when cp the example file
• changed script to output the correct file on install/launch

did not add extra tests for this change as it adds back a config and read me edit. Also apologies for the messy merge history included with the pull.
