[BG-6126] Update dependencies and package name #1

GitHub is warning about vulnerable dependencies. Bumped everything up to latest and renamed the package.

bitcoinjs-lib will eventually be deprecated and replaced with bitgo-utxo-lib, but we'll keep it as is for the moment
