Thanks @edwardtfn, that allowed it to compile with Fahrenheit, but the only impact is that

• The home screen (which has always been in Fahrenheit as I want) now shows 151°F (where it used to be accurate)
• The climate page has the same behavior as described in the OP but the Fahrenheit temperature (which was Celsius before adding target_low: "60") is close to accurate (but a little higher than my phone), though the slider behavior is still in Celsius with the same behavior as in the video from the original post

@JS1Dev, sounds like Home Assistant is converting it to Fahrenheit while this conversion was already done by ESPHome.

Could you please try removing your panel's integration from Home Assistant (Settings > Devices and Services > ESPHome), then restart Home Assistant and then add your panel back? It will probably be auto-discovered, otherwise just click to add integration, select ESPHome and follow the steps.

Please let me know the results.
