Mix format remaining unformatted files #254

Description

Runs the mix format command and updates all unformatted files.
Updates the config/config.exs file to not use the deprecated Mix.Config module anymore (see: Mix.Config and Config)

Let me know if we want to merge the two PRs (current one and https://github.com/BlakeWilliams/Elixir-Slack/pull/253) together into one or whether you want to keep them separate in order to keep the PR diff somewhat clean 👍

CI is obviously failing on this one as it is currently failing on master 😅 (will hopefully be fixed in: https://github.com/BlakeWilliams/Elixir-Slack/pull/253)

I'm cool to merge them together, if that gives us green CI.
