Update python dependencies

As well as the unit tests here, blockstream/jade tests have been used to verify.
Jade tests exercise both the redis mode and the filesystem-backed mode - also ran some manual tests (in both filesystem and Redis mode).
All looks good.

Added Redis-backend test to github ci-test workflow also.
