Update all dependencies to the latest version. We are lucky and don't have any conflicts

Did you also run backend checks? IIRC we had some trouble upgrading tokio in the past.

Updating tokio was indeed broken. I reverted the commit which update tonic and tokio in the gl-signer-proxy.
