Datasets update

Updates:

• New vignette with guidelines for contribution and dataset formatting.
• Updated all datasets to have consistent object formatting.
• New loading functions for updated datasets, deprecated the old ones.
• Added dataset versioning.

@nilseling, can you please check the contribution guidelines vignette? I'll then upload the datasets to ExperimentHub.
