Clean up #15

Remove v1 Model class
Use Bolt v2 paths
General CDO clean up
Initial parts so unit tests can be written :stuck_out_tongue_winking_eye:
Makes the before function a proper event callback function

Yes, it will create a merge conflict… but I have left @phpetra to complete the requirement (with example code) if she wants to… Otherwise I will PR again soon.
