PHP 8.1 Compatibility #40

This PR ensures compatibility with PHP 8.1.

Add #[\ReturnTypeWillChange] attribute for all relevant methods of:
- \ArrayAccess
- \Countable
- \FilterIterator
- \Iterator
Do not pass null to trim.
Pin the psr/http-message dependency to a version below 1.1.0, which is when return type declarations were added.
