Drop required Cordova version to Cordova 8
Cordova 8 doesn't correctly support CocoaPods
An additional Cordova plugin is needed to fully support CocoaPods

This PR adds documentation to that effect and modifies the cordova minimum version to v8.

This working example is documented in our repo in the cordova-8 branch
