Armor Stand(if not holding anything has the "no arms" graphics) - extreme speed
Pillager - rides ravager(this may be particularly difficult but Ravage&Cabbage can probably help, if you've heard of it) + armor points
Illusioner - creates copies of itself
Ravager - roar attack, by default rams and breaks foilage
Shulker - when ability used shoots bullet
Husk - hunger effect on hit
Wandering Trader - if night, turn invisible until the morning
Vindicator - same as pillager + armor points
Zombie + Skeleton Horse - Jump like horse
Donkey/Llama/Mule - more inv slots to mimic a chest
Endermite - Teleport
Giant(This is a boss mob, it is a giant zombie, only accessed via commands) - be gigantic with giant reach and lots of health plus breaks 5X5X5 in one go
Silverfish - burrow into any stone blocks
Vex - Fly and pass through blocks
(Brown)Mooshroom - mushroom stew/milk + mooshroom on lightning turns brown
Goat - charge forward
Chest - has slow movement and lots more storage(good for tricking people)
Witch - may drink healing potion if health is below 5 hearts
Slime/Magma Cube - high jumping around
Charged Creeper - More damage than normal creeper
Improvements:
All Illagers have more armor points!(Except Vexes)
Evoker - point at a mob to 2/3 chance summon fangs, 1/3 vexes, vexes attack mob
Dolphin - leap forward(even in water)
Brown Panda - can eat bamboo for 1 hunger
Pig - more healing for vegetables
Pufferfish - becomes inflated and automatically does poison damage
Glowing Squid - gives glowing effect to nearby players
Fish - goes faster
Stray - tipped arrows of slowness
Hoglin - Charge forward
Piglin/Piglin Brute - Can freely open chests + fire resistance + piglins don't attack players + piglin brutes have more attack(like a ton more) with golden axe as in vanilla and hearts
Wither Skeleton - fire resistance
Fox - jumps high
Iron Golem - Holds flower + they don't take fall damage
Elder Guardians + Guardians - They can actually live on land, but jump around(minor issue since little people know about it)
Bee - can enter a hive to hide?(minor)
Wolf - Jump attack to do more damage + can eat bones
Turtle - more hp
Baby Zombie - can ride chicken
Dragon: can pass through blocks and can summon explosions from its mouth
Cat/Ocelot - Scares creepers
Enderman - shift + right click to pick up/put down a block + increased reach + lower cooldown
Also maybe add some convenience enchantments e.g.:
Water Protection
Speed of Flight
