Migrate to Jupyter Lab 2.1 #161

JupyterLab has a newer version with breaking changes. Currecnt jupyter-vcdat is built to work with Jupyter Lab 1.0. We need to fix breaking changes and update dependencies to work with the latest Jupyter Lab.
