Calculate estimated accuracy / confidence in accuracy of data extraction

Being able to calculate estimated accuracy of capturing correct data from forms would allow us to:

• Understand how accurate can we expect to be across forms
• Provide the user with an estimation so they understand how much they should invest in manually editing the extracted data
• Potentially allow users to set an accuracy confidence level that they would be comfortable with
