More Robust Testing with Different eCRs #2519

What needs to be done

We need better unit testing/integration/snapshot testing with a wide variety of eCRs.

Why it needs to be done

Now that we have a wider variety of eCRs and will be going back to rework many of the fields in the eCR Viewer are tests need to be more robust to ensure changes do not cause regressions.

Acceptance Criteria

Technical Notes

Owned by eng team - write out any important technical considerations such as: architecture plan/notes, data dependencies, testing plan, etc. Also link any tickets that are dependent on or related to this task

@JNygaard-Skylight are there specific unit or integration tests that need reworking? And is this in the eCR Viewer only or across the pipeline?
