User Story

As a maintainer of mappings, I want the mappings to be organized in a self-documenting structure, so that maintenance is easier

Description/Use Case

prime-router/docs/design/design/mapping-schemas.md describes what the folder structure should look like. This ticket is to implement it.

Marking as blocked for now because we need to revisit/reconfirm the design in prime-router/docs/design/design/mapping-schemas.md after our pivots in mapping strategy.
