Add an example of a pipeline with a config #32

Goal

We want to show an example of how someone would use this package in a production pipeline.

Requirements

[ ] a script that can be called from the command line with parsed args getting passed
[ ] an example config file containing those parsed args
[ ] a pre-processing script/set of functions from a common input dataset example
[ ] a post-processing script/set of functions
