Update our Sceptre configs to use the sceptre-ssm-resolver instead of our home grown one.
Just need to do a find and replace on the files in our config/ dir so that they use this community maintained ssm resolver. @jupiter007 and @briri will need to install the new resolver and uninstall the uc3 one
