Markdown/rich text formatting return from the API is inconsistent: research

It might just be the airtable API interface that's messing up, so double check that first

• Poems the API return isn't markdown, but JSON encoded markdown. see docs https://support.airtable.com/docs/using-rich-text-with-airtable (the return - see below) is not what is shown as a return in the docs)
  • I am hoping that this is pretty standard and we can find a library to parse
