Improve documentation for sections #238

Based on my experiences with Whitman and Habeas projects, and African Poetics. Specifically: what templates do and don't need to be overwritten?

We have documentation for this, but I think it could use some updating to incorporate considerations for how Orchid Sections are involved: https://github.com/CDRH/orchid/blob/dev/docs/overrides.md

While documentation would be good, this isn't essential for this release if we can't get to it in time
