Were there any other gems that could be updated for this (it has been a while since march, although maybe it's not a big thing since I don't think we can bump rails much more at the moment)

I'd like to take a deeper look into updating the Rails version, but I think that can be a separate PR. What do you think?

Agreed, let's make a new issue for that! Updating something is better than nothing!
