fix default MAX_STK_VELOCITY value in documentation #80

Documentation shows incorrect default value for MAX_STK_VELOCITY environment variable:

MAX_STK_VELOCITY: [default: 0.0001]

Define maximum stack exit velocity in unit of m/sec

Actual default value is 500 m/sec
