Convert to textbook #29

A first-order goal for the next iteration of this class is to convert these lecture note slides to textbook / lecture note format, and then to make classes more interactive and problem-based.

As part of this shift, labs can be made more self-contained (1 class period).

There's a related opportunity to add case studies and practice problems on the non-lab day of the week.
