Disable Vim Binding by default #10

Context

We have added a new feature to install the vim keybinding as a dependency. Changes are made in these two files:

  1. Dockerfile
  2. environment.yml

It was requested to keep this extension disabled by default so that only those use use the feature can enable and use it.
