Add readme and info explaining the process to webpage #7

I've updated the README with instructions on how to use the text mappings generator. I also modified the code so that column headings in worksheets are no longer case-sensitive. i.e. in certain worksheets you must have a column with the header 'Dataset prefix', but 'dataset prefix', 'Dataset Prefix', 'DATASET PREFIX', 'dAtasEt pReFix' etc. are also valid.

Thanks, it is helpful. I have made some amendments about the other changes it makes in the outputs.
