Reorganize "Fabrication" folder to reflect new versions of sensor

[x] Create readme.md file explaining the need for multiple designs and separate folders, plus how to choose the best enclosure option for various applications
[x] Create readme.md files for assembly guides using old instructions
[x] Update assembly instructions + add step-by-step photos (for both designs)
[x] Build BOMs for both designs
[x] Upload finalized parts list spreadsheets
[x] Add datasheets for components
