Last minute cleanup included in demo

This PR contains some additional changes to two notebooks that were shown in the demo earlier this week. Specific changes:

• Add Markdown section headings to clean_us_data.ipynb
• Filter out unnecessary columns in the outputs of tables_us_data.ipynb
