Our current "production" steps that run services via docker involve running the frontend in dev mode. We could make the necessary changes to run the frontend for production (except deployment), such as:
Set up env files for production and update docs such as instructions
Add root level script to build & serve (preview) production frontend, e.g. pnpm run -F frontend build && pnpm run -F frontend serve
Preview seems to default to port 4173, and dev to 5173
