Add the submission details from Avocet as a ZenDesk note as in the current site, as well as adding the information to custom fields.
The reason is to give the submitter more context when they receive the email replies from the Helpdesk. E.g.
The layout of information should be as below. NB I've made a couple of changes highlighted in bold.

This is a review paper rather than research, although my salary is funded by the Wellcome Trust through a Wellcome Trust Veterinary Postdoctoral Fellowship so I am not sure if they will want it to be open acces. I am currently on secondment to Oxford - hence the oxford email address, although am still employed by Cambridge.
The final editoral changes were only sent to me this week, and the attached document is the final approved text, although the manuscript itself was actually accepted on 2nd August.
I have been sent a link asking me to sign a licence agreement by Wiley / JSAP but have not done this yet.
