This PR does basically three things:

Fixes a bug in the global smoothing of the topography; before this PR the smoothing assumed periodic boundary conditions which introduced artifacts at the domain boundaries
Adds the routine grid.compute_bathymetry_laplacian()
Refactors the plotting routine
