Fix Windows errors preventing startup / port over macOS only functions

Right now on local dev for Windows there's a bunch of errors on startup.

Most of these are related to some functions being macOS only - needing a Windows version.

Need to start the desktop app locally on Windows, and fix any errors that flag up / prevent the app from running.

Some macOS only functions will need to be ported over to Windows.

You can get through this quite quick, function by function, using Cursor + Claude 3.5 Sonnet.
