I am also experiencing the same issue, though I use Dalamud at 36pt font. I have to reduce the size to 18pt or lower for me to see both the left and right sides of the configuration window.
I play at 4k and have always had my Dalamud font set to 24. Sometime within the last couple of months, the Tweak selection window functions weirdly on different font sizes and cannot be resized correctly anymore. I've fully uninstalled and reinstalled Dalamud, with only Simple Tweaks installed and it still does this. This is the only window, out of all the addons that I use, that behaves like this. The picture shows that I can't resize it any smaller horizontally.
