Fix packaging pipeline #9

The app is currently able to be packaged but requires some workarounds as the scripts have some broken interdependencies.

The packaging scripts should be fixed so that newcomers are able to easily build the project.

This works, but I think the automated process still hits some errors.

I recently upgraded another applet to a Vite-only build pipeline and there are some learnings there which could be ported to this app for future-proofing and simplicity.

@LeosPrograms for now would you please be able to document the workarounds you're using to get a build, if that's still the process you're following?
