Hi Adriano,
I will be happy to help if I can - the project sounds like a good project. It absolutely should be possible, but one thing to consider - v12 of Umbraco will be released with the new Headless with Open API, which may help with your project. It's due out in May sometime (see : https://umbraco.com/blog/umbraco-cms-roadmap-something-to-look-forward-to/)
In terms of performance there should be no problem at all, as long as your container host is a performant machine suitable for your requirements.
I've put everything from my talk into my docker workshop, which does include details on how to dockerize an Umbraco site, and it should work fine with Umbraco 11.

He he - yeah, oops - I do need to fix my website. TBH, it's a very old umbraco 9 site, I need to update it to 11, I've just been too busy :-)
