Completely rebuild Catalyst from the ground up on new Infrastructure (WebRTC SFU)
Feature parity with Catalyst V2, plus the ability to set custom themes, new grid layouts, token based auth keys, larger room sizes and number of simultaneous rooms, and groundwork for more awesome upgrades!
The starting point for the Catalyst SAAS

Further changes: need to minify Tailwind at buildtime, switch to custom Catalyst repo for js-sdk. May require secrets
