Changed CEL Logo
Changed colour schema
Changed "Celsius Network" to just "Celsius"

Hey @rguarascia I'm sorry for not addressing this PR earlier. Since you have made changes to the docs/assets/images/overview.svg, can you apply the same wording changes to this svg as well before I merge the PR?

Given that our docs have changed this PR is outdated and therefore rejected.
