There are many XMPP server installation guides out there. If you want to go entirely self-hosted (including your own file storage/sharing), I recommend the following combination:

Nextcloud (file sharing+user management)
JSXC (XMPP chat in Nextcloud)
ejabberd (XMPP server)
coupled with xcauth so that only Nextcloud needs user management.
