Resolves #57 and resolves #63 #71

To fit in the flow, I've modified the introductory paragraph to briefly discuss relationship between FIB and GI illness for #63.

Then, inserted a couple of sentences later to resolve #57.

@nicklucius - if you can run this on your machine to confirm it's fine. I'll deal with the merge conflict.

I'm going to also include this paper to provide estimates for the cost of GI-illness related to contaminated water ($3 billion/year).

@tomschenkjr - I took care of the merge conflict, but noticed that there's a paper mentioned above that you want to include, so I didn't merge yet.
