Add Holesky network support #34

Adds functionality necessary to support Holesky testnet.

Verify Holesky deposit correctness
Add "holesky" parameter to all commands
Modernize deps, including ssz_rs (the version used was 1 year old)
Switch to using new ssz_rs API
