feat: hot-reloading theme #5

At the moment, when changing the theme, the app needs a full restart. It's not a huge deal at the moment since we can only switch between dynamic and default; however, we should implement some sort of hot-reloading of themes to improve the UX when we have support for selecting multiple themes.

Can this be closed, or does the hot reload not work properly yet?

It works but I thought I'd leave it open until we have it working with custom themes too
