nixpkgs.config.permittedInsecurePackages does not properly allow for the configuration file to run as
"openssl-1.1.1u" isn't the version of openssl one would install they instead install "openssl-1.1.1v"
A pull request will be issued with this change. There may be other issue trying to run this out of the box currently which of course shouldn't be done as stated in the README though I think it may be worth updating the openssl version at least.
