Moves us to using the expo router instead of just react native's navigator. Also moves us to using my latest backend for the API. Note that this will need to be updated to the correct base URL if/when we migrate to a production URL. Also made some very slight CSS style changes, though I'm sure that should receive focused UI design effort to make it less "bare" feeling
