[BUG] Keycloak chart is out of date with v1.12 #351

Describe the bug The Keycloak, image tags, and other info is out of date with the chart K8s template

To Reproduce Steps to reproduce the behavior:

  1. Go to the charts deployment for openrmf-docs
  2. view the values.yaml file
  3. view the chart yaml file
  4. view other yaml files for NATS and other 3rd party components

Expected behavior v1.12 up to date information

Additional context Can compare to the docker-compose.yml in v1.12 for updates and changes manually.
