feat(logger): add additional functionality

[ClaireWhere]

• Add debug log level
• Add colorized console output when not in production mode
• Change from simple console logging to fully formatted console logging
• Refine log format
  • Use custom timestamp format (YYYY-MM-DD HH:mm:ss.SSS)
  • Add padding to output to be on the same level
  • Remove brackets from label and include them in output instead
• Add basic error handling
