Related, sometime today, it looks like the issue with the Goblin Mounts and Draenei Paladin mounts showing up for all Alliance toons was fixed (and the Horde equivalent issue, it seems). However, now the Goblin Trikes are unable to mounted for Horde, the Worgen Horses are unable to mounted for Alliance, and Draenei Paladins are unable to mount on their exclusive Elekks. They also don't show up in the collections at all, for races/classes that can get them.
Edit: Apparently the Tauren Paladin Kodo mounts show up for all Horde classes and races as well.
1. Current Behavior
1.1. Description
There are several items in the collections (pet, mounts, toys), that are showing up but are not available to players. Similar to Wrath Classic, these should be hidden if not obtainable. These are:

In addition, the following pets do not show up if you don't own them, but are obtainable in Cataclysm
Scorchling - Originally obtainable from Ahune in TBC, it was removed from his loot table in WotLK. Now obtainable once more from the Molten Front. Celestial Dragon - This pet was in WotLK's database but not obtainable. Now obtained from the 150 pet achievement in Cataclysm.
Lastly, some unobtainable Heirlooms exist in Cataclysm's database. Some of these do become available in later expansions, though.
