Create script to make mini datacubes #136

This is to support stories about embeddings on specific use cases. The script should provide a light-weight way to generate data that can be fed to the model for exploring embeddings.

The first iteration of this will focus on collecting Sentinel-2 and Sentinel-1 datacubes, but separately, not aligned. These can then be passed to the model using partial inputs https://github.com/Clay-foundation/model/issues/126.
