Backport lowfat pipeline from macula-greek and standardize directory structure #106

This PR backports the lowfat pipeline from macula-greek #83.

I've also moved things into a WLC directory for consistency with the SBLGNT/ and Nestle1904/ directories.

If we aren't happy with the WLC directory, I can revert that change and just land the lowfat pipeline.

@jonathanrobie This branch is now up to date with main.

If you want to check out the branch and try out the instructions in the README you're welcome to do that.

Otherwise, if you're ok with the new directory structure, I think we can merge this and cut a new release.

I will add a note in the release that the new directory structure would be backwards incompatible (if integrators were looking for nodes/, they would now need to look in WLC/nodes/, etc.
