This PR does the following:

adds missing paths in data_paths.yaml for EC-Earth3 SSP5-8.5 precip
creates notebook precip_clipping.ipynb to compute the number of "post-processed", e.g. swapped or clipped timesteps, in a given 21-yr period for tasmax and precip for all models, scenarios and multiple time periods
plots the analysis from the above
