Adds support to build/run the app from ARM64 OS #47

This PR adds | fixes:

Adds an DOCKER_DEFAULT_PLATFORM env var in docker-compose file
Updates the README with instructions on how to run a demo using Docker - also with an ARM64 OS

How to test:

Follows the new instructions in the REAME file

Expected outcome:

[ ] The demo instance should work as expected
